Yummy sunny bell pepper eggs!

I worked out hard this morning and was STARVING! This really hit the spot!

Momma T’s Sunshine Eggs!!

1 bell pepper (your favorite color-mine is yellow or red)

2 eggs

Mozzarella (or your favorite cheese)

Salsa (optional)

Salt & Pepper, to taste

Start with a little coconut oil in a pan on medium-high heat. Slice your bell pepper in about 1/2-3/4″ slices.

Sauté the pepper slices for a minute or two.

When you start to add the egg go slowly so the heat can cook the egg and form a seal at the base of the pepper (otherwise it will all seep out immediately). Turn the heat down to low-medium. Flip after 2 minute. Salt and pepper to taste. Once the egg cooks to your liking, flip one more time and add shredded cheese to melt.

Top with salsa or your choice of condiment.
